El Aguijón is born from the soul of Mexico—its culture, traditions, and the artisanal hands that give it life.
Among Mexico’s vast landscapes, Jalisco holds a special place: the cradle of blue agave, a sacred plant transformed into a spirit that embodies centuries of history, passion, and pride.
Grown in the Highlands of Jalisco, once our fields reach full maturity, they are harvested. Carefully selected and known as “Supreme Agave.”
We begin with slow, traditional cooking in masonry ovens, followed by milling and the extraction of sweet juices.
This is followed by fermentation, where the alcohols are developed, and concludes with a double distillation in copper and stainless steel stills.
By carefully adjusting cooking, fermentation, and distillation times, we achieve our exquisite, additive-free profile—giving rise to AGUIJÓN SILVER.
However, the work does not end here. For the creation of our Añejo and Extra Añejo Tequilas, the journey has only just begun.
Aged
Aged in American oak barrels, it gives rise to exceptional flavors, where every sip expresses the character drawn from our barrels and the passage of time.
